Bunka 210mm Misuzu VG10 - Polished, Ho-Wood handle
A knife for every day with simplicity and elegance.
This Bunka chef's knife is handmade by Misuzu in Miki, Japan for our shop. The 3-ply blade construction characteristic of genuine Japanese kitchen knives can be clearly seen in the transition from sheath steel to free-ground core steel on the surface of the blade. The upper polished part of the blade has a shiny surface of softer stainless steel, through the grind you can see the transition to the cutting edge of VG10 steel. Soft on the outside and hard on the inside is the principle of a flexible blade and hard cutting edge at the same time. With its inverted tanto tip, this bunka has ideal properties for fine and precise work and can still be used as an all-purpose knife. This knife excels especially in cutting fish, but it is equally suitable for meat, fruit and vegetables. If you are looking for a chef's knife that is light and agile and can make professional chefs as well as hobby chefs happy, then you have come to the right place.
