Therefore, most brands or forges also have the many designs in terms of blade shape, material used (handle in the case of wood and steel of the blade), weight and size. With the right blade, the work always goes easily from the hand!
      If you are considering a Japanese knife set as a gift, it is therefore advantageous to know the preferences of the recipient. This is especially true for the knife steel and the wood of the handle. Whether it may be a series of Damascus knives or a Santoku knife blade or rather blades made of VG 10 steel is up to the respective preferences.

      Does it have to be a Damascus knife?

      The term Damascus or Damascus knife is not protected.       A Damascus knife is not a designation for a specific blade shape. For example, a Damascus knife can be a Santoku knife, a Nakiri knife, or any other type of knife.

      Japanese knives belong in a knife block - is that true?

      Cooking knives from Japan or other high quality knives are known for their sharpness. This sharpness results from the steel used for the blade and the techniques used in the forging.
      Knife blocks are mostly made of wood and the knives are pushed by hand into milled slots. This can damage the Japanese knife and especially the blade. The wood can scratch the surface of the kitchen knife and dull or chip the edge. This damage can usually be corrected by hand with sharpening stones and sharpening, but the sharpness and edge retention of the chef's knives suffers when using knife blocks.

      The storage of Japanese chef's knives

      So magnetic knife holders or storage in a drawer are better. So a knife block can also be detrimental to the steel of the knife.
